Yam & Carrot Soup
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 5 medium carrots, chopped
- 1 medium sweet potato, peeled and chopped
- 4 cloves garlic, minced
- 1 tbsp ginger, minced (about a 1 inch piece)
- 6 cups vegetable stock, low sodium
- 1 tbsp turmeric
- 1 Β½ tsp curry powder
- ΒΎ tsp garam masala
- Β½ tsp paprika
- Β½ tsp cinnamon
- β cup coconut milk
- Salt and pepper to taste
Directions
- Heat olive oil in large pot over medium heat.
- SautΓ© onions until translucent, about 5 minutes.
- Add garlic and ginger until fragrant, about 1 minute.
- Add spices, carrots and sweet potatoes, stir to coat thoroughly.
- Add vegetable stock and bring to a simmer.
- Simmer for about 25 minutes or until sweet potatoes and carrots are tender.
- Remove from heat and allow soup to cool. Once cooled, use a blender to puree soup until smooth.
- Slowly add in coconut milk while blending.
