Yam & Carrot Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 5 medium carrots, chopped
  • 1 medium sweet potato, peeled and chopped
  • 4 cloves garlic, minced
  • 1 tbsp ginger, minced (about a 1 inch piece)
  • 6 cups vegetable stock, low sodium
  • 1 tbsp turmeric
  • 1 Β½ tsp curry powder
  • ΒΎ tsp garam masala
  • Β½ tsp paprika
  • Β½ tsp cinnamon
  • β…“ cup coconut milk
  • Salt and pepper to taste

Directions

  1. Heat olive oil in large pot over medium heat.
  2. SautΓ© onions until translucent, about 5 minutes.
  3. Add garlic and ginger until fragrant, about 1 minute.
  4. Add spices, carrots and sweet potatoes, stir to coat thoroughly.
  5. Add vegetable stock and bring to a simmer.
  6. Simmer for about 25 minutes or until sweet potatoes and carrots are tender.
  7. Remove from heat and allow soup to cool. Once cooled, use a blender to puree soup until smooth.
  8. Slowly add in coconut milk while blending.
